RICE WITH CHICKEN CURRY

You can replace the broth with water, but if you do, then the rice will be a little more bland. We also add one or two tablespoons of curry (to taste) and a pinch of salt, if necessary. If you use water, it is going to be necessary and if you use a homemade broth, to which you did not add salt at the time of preparation, too. If you use a commercial broth, it probably is not necessary. In any case, it is best to try and let the broth taste a little "salty". In the end, rice is a very bland ingredient and it needs salt to make it tasty.
5.- Mix everything for one minute, so that all the ingredients spread well throughout the paella pan. Then let cook over moderate heat, pulling low for about 20 more minutes, without stirring again. Until the rice absorbs all the broth and is al dente. If you like softer rice you can add a little more broth and cover at the end, with the fire off, when you have absorbed all the liquid
