POTATO OMELETTE STUFFED WITH HAM AND CHEESE

- 3 medium potatoes
- 5 eggs
- 1/2 onion
- 4 slices of ham
- 8 slices of cheese, type for sandwich
- Salt
- Olive oil
RECIPE OF THE TORTILLA FILLED WITH HAM AND CHEESE:
1.- In a pan over medium heat, add a good jet of oil. Then add the potatoes well peeled and chopped and the onion cut into larger pieces. Add a pinch of salt and let cook everything, while stirring frequently with a wooden spoon, for about 10 minutes
2.- After the time, we crush the potatoes with the spoon. They will be soft now, so it should not be hard to do it. Let cook 5 more minutes while crushing frequently, until we have obtained a very solid potato puree
3.- In a bowl put the eggs. Add a pinch of salt and beat well. Then add the mashed potato and onion and mix until a homogeneous mass is obtained
4.- Put a small splash of olive oil in a smaller and deeper pan, over a fairly moderate heat. Place approximately 1/3 of the potato and egg mixture. With the spoon spread it over the entire surface of the pan and on top, place 4 slices of cheese, 4 slices of ham and finally 4 slices of cheese. If you want you can add the same amount of cheese as ham. Or more ham than cheese. That already, to your liking. On top we place the rest of the potato and egg and with the spoon we extend it in such a way that the surface is well ready. If it appears a little bit of stuffing, nothing happens. Cook over medium heat 5 minutes
5.- With the help of a plate, we turn the tortilla and introduce the other side in the pan. Nothing else to do, we passed the wooden spoon by the edges of the tortilla, in such a way that we go "picking up" a little bit with it. In this way, we will achieve a more rounded and more showy shape. We cook another 5 minutes more
6.- Finally, we remove it from the pan with the help of the plate. It's ready!
