PEPPERS FILLED IN THE OVEN
Baked stuffed peppers are an alternative to conventional stuffed peppers. In this case, they will be stuffed with rice, minced meat and some vegetables and then roasted. You can add some saffron, which will add an extra touch of flavor and color to the rice. Or simply tomato. They are very easy to make and in a matter of an hour, they will be served at the table. To prepare these stuffed peppers you will need:
INGREDIENTS TO PREPARE 6 PEPPERS FILLED IN THE OVEN:
- 6 colored peppers. Of the variety that are wider than long.
- 200g of round rice
- 200g of minced meat (to your liking if you choose veal, pork, chicken or mixture)
- 1 onion
- 4 cloves of garlic
- 4 tablespoons crushed tomato
- Oregano
- salt and pepper
- Olive oil
- Grated cheese
RECIPE OF PEPPERS FILLED WITH THE OVEN:
1.- We cook the rice. We put twice as much water as rice in a casserole dish. We boil it and then add a pinch of salt and rice. Let cook until it absorbs all the water. Taking into account that afterwards they will go to the oven, it is better that they stay a little more hard than "al dente"
2.- While the rice cooks, we prepare the peppers. We cut the tip of them and we reserve it. We will need it for later. After cleaning the inside of the pepper, removing all the white parts of it, are quite hard. This we throw. We can do it with a knife or with our hands. Then we wash the peppers with water to eliminate the seeds and other impurities
3.- We prepare the filling. Put on medium heat in a pan, a drizzle of oil. Add the tips of the peppers, onion and garlic. All well chopped. We cook about 5 minutes while we stir from time to time
4.- After the time, add the minced meat. We crumble it with the spoon and mix it with the vegetables while we cook it for a couple of minutes. Let it take color
5.- After the time we add the tomato and a little oregano. We stir and let cook 5 more minutes
6.- When everything is well cooked, remove the pan from the heat and add the rice that is already cooked. Mix with the other ingredients
7.- Finally we fill the peppers with this mixture of rice, meat and vegetables. Fill generously, crushing a little the stuffing to put all the possible that when split the peppers are well filled! Once done, sprinkle with a little grated cheese and finally put them in the oven, previously heated to 200ºC. We leave you here around 20 minutes
