CHICKEN CHICKEN WITH VEGETABLES RECIPE

Chicken stewed with vegetables is a recipe typical of grandma. In addition, like almost all stews, it is very economical to make. It is also easy and done relatively quickly. To prepare this recipe for stewed chicken with vegetables we will need the following ingredients

INGREDIENTS TO PREPARE A CHICKEN WITH VEGETABLES FOR 4 PEOPLE:

  • One whole chicken or 6 chicken legs
  • 1 onion
  • 2 cloves of garlic
  • 1 green pepper
  • 1 red pepper
  • 200g of crushed tomato
  • 1 or 2 bay leaves
  • chopped parsley
  • 1/2 glass of white wine
  • 1l chicken broth
  • olive oil
  • Salt and pepper

CHICKEN RECIPE WITH VEGETABLES:

1.- Cut the chicken, if we have it whole. We remove the chicken breasts and thighs from the carcass and reserve it. If you have chicken thighs, obviously you do not need to do this step. The good thing about doing it with a whole chicken is that you can make a broth with the casing, covering it with water and letting it cook over a low heat for 1 hour. You will get a delicious broth that you can take advantage of later.

2.- Salpimentamos the chicken. In a tall saucepan, add a little olive oil to heat over a high heat. Once hot add the chicken and seal it on all sides. It is not necessary to cook it inside. Just seal it and roast it a little on its outer face

3.- Once you have picked up some color, we remove it and lower the fire. In the same oil that we have cooked the chicken add the onion, peppers and garlic cloves, all well chopped. Season with salt and let cook for 5 minutes on a low heat, stirring frequently.

4.- After the time, add the crushed tomatoes and bay leaves and mix with the rest of the ingredients. We cook about 10 more minutes.

5.- When the tomato has reduced more than half, add the white wine and let it cook until almost all the liquid has evaporated. About 3 more minutes

6.- We add the chicken to the whole preparation and mix well. Next, we cover with the chicken broth. If you do not have broth you can use only water. Let cook at medium heat for about 40 more minutes, until the chicken is tender and all the flavors have intermingled.

7.- Serve with generous garnish of vegetables and sprinkle with chopped parsley

You can substitute the ingredients of this chicken with vegetables to your liking. Adding and eliminating vegetables and spices at your whim. It's delicious!
