INGREDIENTS TO MAKE A CHICKEN BREASTS IN TOMATO SAUCE FOR 2 PEOPLE

• 400g of chicken breasts
• 1/2 onion
• 1 clove garlic
• 500g of crushed tomato
• 1 teaspoon oregano
• salt and pepper
• Olive oil
• Cheese and parsley, to sprinkle

RECIPE OF CHICKEN BREASTS IN TOMATO SAUCE

1.- We will need the breasts filleted. They sell them already in this state and if not, we can ask the butcher to file for it. Or we can do it very carefully at home. The first thing we are going to do is to pepper the breasts. Next, we put a drizzle of olive oil in a pan over a high heat. And we add the breasts

2.- Cook the breasts one minute for each side with a strong fire. After the time, we turn around and cook the other side. The idea is to seal the chicken, leaving it raw inside, so that it does not dry out excessively. Once this is accomplished, we reserve the chicken on a plate

3.- In the same pan, add another little oil, this time over a low heat. Add the finely chopped onion and garlic and cook, while stirring frequently, about 10 minutes

4.- When the onion is tender and transparent, add the crushed tomato and the teaspoon of oregano. We mix all the ingredients and let cook for 10 more minutes

5.- When the tomato has cooked a little, we add the chicken breasts, along with all the juice that they have been able to release. We integrate the chicken into the tomato and let it cook for 5 more minutes. Finally, once plated, we can sprinkle with a little grated cheese and chopped parsley
