RICE AND CHEESE BALLS RECIPE

The balls of rice and cheese is a very practical recipe. It is delicious and you can also use rice that you have left over from the previous day. Of course, you can also prepare fresh rice to make this delicious dish. It is made with fairly basic ingredients and does not take too much time or effort to make them. If anything, give the shape of the balls. As a result, we will have an empanada ball filled with rice and melted cheese. At its core, in addition, we will introduce a small portion of mozzarella. Much more melted cheese still! To prepare these rice and cheese balls, we will need the following ingredients.

INGREDIENTS TO MAKE A BOTTLES OF RICE AND CHEESE FOR TWO PEOPLE:

  • 200g of round rice
  • 2 cloves of garlic
  • 50g grated mozzarella
  • 50g fresh mozzarella
  • 1 teaspoon oregano
  • Bread crumbs
  • 1 egg
  • Salt and pepper
  • Oil

RECIPE OF RICE AND CHEESE BALLS:

1.- In a small pot we put a little oil on a soft fire. We add the cloves of garlic and let cook a couple of minutes. The idea is not to brown the garlic if you do not flavored the oil with its flavor. That's why it's better to do it with very soft fire

2.- Add the rice and stir with a wooden spoon over medium heat for another minute.

3.- It is time to add water. Double the amount of rice, so if we had put 200g of rice, we put 400ml of water. You can add chicken broth or vegetables, if you prefer. Add a pinch of salt and let the rice cook over medium-low heat for about 15 minutes. Until you have absorbed all the water

4.- Once cooked, let the rice cool completely in the fridge. From this point, the steps to follow are the same as if you had a rice that was left over from the previous day

5.- We season the already cold rice to taste. We put some freshly ground black pepper, a teaspoon of dried oregano and grated mozzarella cheese. We stir well with the wooden spoon

6.- Now we take a small portion of the rice and crush it with the other hand a little in the center. In that place, we put a small portion of fresh mozzarella cheese. Then we take another slightly larger portion and put it on top. We shape a ball so that that portion of cheese is enclosed inside. Make sure you press the ball correctly or if you do not run afterwards, you risk getting rid of it. In the end, there will be a small ball that will fit widely in the palm of our hands. About the size similar to a tennis ball.

7.- Pass the ball through flour, then through beaten egg and finally through bread crumbs. Once all are breaded, leave on a plate and freeze for 10 minutes, so that the dough seats well. You could also put it in the fridge for 30 minutes

8.- Fry in abundant oil that is quite hot. Do it until the balls are golden brown on the outside and the cheese inside (both the grated and the fresh) is completely melted. It will take around 3 or 4 minutes so do not put the oil at full power. Finally remove and put on absorbent paper, before eating

And that's how easy it is to prepare these balls of rice and cheese. The part of breading is perhaps the most cumbersome but, in a matter of 30 minutes (once you have the cooked rice) they will be at the table!
